Chia Chocolate Pudding

2 portions of chia chocolate pudding topped with frozen strawberries and blueberries
Chia seed chocolate pudding

I love chocolate! But it isn't always good for you and it isn't something you should over-indulge in. So I try to find ways to get my chocolate fix through healthier versions.

One of the things I crave sometimes is pudding. So I searched the web and found an adaptable recipe and changed some bits to fit my tastes.

The biggest benefits of eating this is that Chia seeds are high in Omega-3, fiber and protein. It will assist in controlling your leptin sensitivity. Also the addition of cinnamon may help to lower blood sugar levels.

Hope you like it.

Chia Chocolate Pudding Recipe - makes 2 servings

  1. 1/3 cup chia seeds

  2. 1/4 cup unsweetened cocoa powder

  3. 1/2 tablespoon ground cinnamon

  4. 1/4 teaspoon sea salt or himalayan pink salt

  5. 1/2 teaspoon vanilla

  6. 1 1/2 cup almond milk (or any other milk you prefer)

  7. 2 tablespoons date syrup (or maple syrup, agave, stevia, honey, etc.) - date syrup is not as sweet so add more if you want it sweeter

  8. adjust to your taste

Place all ingredients into a blender and blend until smooth. Top with fruit of your choice (I like strawberries).

Leave in the refrigerator to set for 5 hours. Enjoy!
